onion soup by Rieke

In Warsaw we are still waiting for spring - extra vitamin C in onions is more than welcome! Girls, do you remember this soup from Vilnius and our cooking class with Rieke? ;)
  • 600 grams of onions
  • bouillon for 1 liter (vegetables or meat)
  • 50 gram of butter
  • bread
  • cheese
  • salt
  • pepper

Cut the onions in small pieces. Put in a big pan the butter and let it melt. If the butter is melted put the onions in the pot. Bake the onions in 20 minutes on low heat and put it afterwards for 10 minutes on a higher fire. The onions should not become brown. Put the bouillon in the pot and let it cook for 30 minutes. Put salt and pepper to make it tastier. Roast the bread and rasp the cheese. Serve the soup with on top the roasted bread and cheese.
