Thit Kho (caramelized pork) by Phat

Today a typical Vietnamese comfort food. Missing Phat & Louisiana!

2tbs of powdered sugar
2bs water

1 tbs of finely chopped garlic
1 tbs of finely chopped ginger
500gr of pork shoulder cut in small rectangular shape (say 3x2x1 cm, something like that)
2 tbs of fish sauce
1 can of coconut juice (juice/water, not milk. Fresh coconut is even better, ow watter is fine. You can try it with sprite as well, for a different taste...)
6 peeled hard boil eggs

1. Take a mid sized pot (enough to contain all your ingredients and put on medium-high heat
2. Once the pot is hot throw in the sugar, then the water, i.e. basically create a bubbly caramel
3. Once the caramel is a light golden brown (dont wait too long this goes quick :)), throw in the garlic and ginger
4. Let the garlic and ginger cook a bit, while mixing, the mixture should get darker
5. throw in the 'cubed' pork in there and mix so you spread as much of the caramel on the meat
6. throw in the fish sauce
7. keep mixing and let the meat cook for about 5 minutes, meat should 'look' cooked
8. throw in the coco juice (this should cover the meat at least), mix, bring to a boil, then lower the heat, cover, and simmer for 30min or more
9. add in the hard boiled eggs, mix them in delicately and let it simmer about 15 more min.

Server one egg, and a scoop of pork & juice with rice, enjoy ^_^!
